Everest Goldstein

Founder

Hello! My name is Everest, and I am a board-certified psychiatric nurse practitioner certified in functional medicine. I was born and raised in Dallas, Texas, and earned my B.A. in Psychology from Princeton University. After graduating from Princeton, I worked with Teach For America as a bilingual elementary school teacher, administrator, and curriculum developer. During this time, I also earned my Master of Education from Southern Methodist University in Dallas, Texas. I am also an internationally renowned speaker, passionate about educating others on the mind-body connection and advancing conversations around mental health and holistic care.

While working in education, I saw firsthand the significant need for accessible mental health services in the community. This realization led me to pursue my passion for mental health care, and I went on to earn my Psychiatric Nurse Practitioner degree from Vanderbilt University. To further support my patients through a holistic lens, I also completed my functional medicine certification through the Institute for Functional Medicine.

I am the founder of Everest Functional Psychiatry and Wellness, one of the only Functional Psychiatry practices in Texas, as well as Evergreen Functional Collective, an integrative and functional medicine practice. I also serve as faculty for the Institute for Functional Nursing.

My approach to care is rooted in the belief that the mind and body are deeply connected. By integrating lifestyle, nutrition, medication, and innovative technologies, I work with each patient as an individual to help them better understand their health, regain balance, and improve their overall wellbeing. I am passionate about reducing the stigma surrounding mental health and expanding access to care through education, advocacy, and compassionate treatment.

In my free time, I enjoy being outdoors at the beach or in the mountains. I love to waterski, hike, cook, travel, and spend time with friends and family.

Morgan Prejean

MPAS, PA-C, MBCE, RYT-200

Morgan is a board-certified Physician Assistant with a passion for helping people get to the root of their health concerns. With a background in both conventional and functional medicine, she takes a whole-person, personalized approach to care.

Her own health journey is what ignited her deep interest in functional medicine. After navigating complex health challenges herself, she became committed to helping others find answers and lasting healing—especially in the areas of hormones, gut health, detox, mold toxicity and nervous system support.

Morgan earned her Master’s degree from LSU Health Sciences Center and holds a 200-hour yoga teacher training, which influences her integrative perspective on health. She believes true health is not just the absence of symptoms but feeling empowered, energized, and at home in your body. She is honored to walk alongside her patients on their healing journey and create a space where they feel heard, supported, and inspired to thrive.

Lyndsey Perrin

MMSc, PA-C

Lyndsey Williams, MMSc, PA-C, is a board-certified Physician Assistant with over a decade of experience in both traditional and functional medicine. She is passionate about helping patients understand the “why” behind their symptoms, taking a thoughtful, root-cause approach to care. Her style is grounded in curiosity, collaboration, and truly listening. Lyndsey believes some of the most meaningful healing happens when patients feel seen, understood, and supported—and she strives to create that experience in every visit.

Lyndsey has a special interest in connecting the dots between physical and mental health, with a keen ability to recognize subtle patterns in her patients’ stories and symptoms. She is known for breaking down complex information in a way that actually makes sense, helping patients feel informed, confident, and actively involved in their care.

Lyndsey earned her Master’s degree in Physician Assistant Studies at Emory University in Atlanta, GA. She grew up in Florida but now considers herself a proud Texan. Outside of work you can usually find her chasing around her two kiddos, at a concert with her husband, or planning her next travel adventure.

Megan Catalani

Health and Nutrition Coach

Megan is a certified Health and Nutrition Coach with over a decade of experience supporting functional medicine patients in achieving lasting health goals. She specializes in gut health, hormonal balance, and weight loss through personalized, sustainable lifestyle changes. With a deep passion for daily movement and holistic wellness, Megan empowers clients to take charge of their health through nutrition, mindful habits, and evidence-based strategies. She is also a certified yoga instructor, integrating movement and mindfulness into her coaching for a well-rounded, functional approach to wellness.

Functional medicine is “root cause” medicine. It looks at the whole person as an individual to identify and address the underlying causes of symptoms, rather than simply managing them. Instead of a one-size-fits-all approach, functional medicine considers the full picture of health — including gut function, hormones, inflammation, metabolism, immune health, toxin exposure, lifestyle, and cellular function. Through a personalized, multimodal approach, we aim to support true healing and help patients restore balance, optimize their health, and improve overall well-being.
